Difficult relationship with father

— So you were never satisfied with the salary of a theater and film actor? - Exactly. In the early 90s, an actor's salary was not just small, but truly humiliating, and I already had a family. I often traveled abroad and used all possible legal ways to get rich. I brought things and handed them over to thrift stores. Back then it was called speculation... And yet I didn’t do anything illegal. Everything that I brought from abroad was bought only with my own, honestly earned money. This was a normal reaction of a normal person with at least some understanding of commodity-money relations.

— How did you get your start-up capital? — The starting capital for the establishment of the same “Pilot” (one of the first night discos in Moscow) consisted of completely different money. I mortgaged my own apartment. This path has been followed by everyone who is now more or less on their feet.

- But you risked being left without a roof over your head... - Yes, you did. But I tried to calculate everything thoroughly. The combination of risk and accurate calculations is business. Seventy percent of the cost of the apartment could well be enough to start a business.

— Did you have to use the name of the famous pope to open the doors of government offices? - Of course. I was accepted and listened to at least once. My task was to use the audience wisely. I am my father’s son and see no reason to disown his name.

— How did the restaurant start? — The predecessors of the restaurant were the same discotheque “Pilot” and then the nightclub “Soho”. They already had some kind of primitive kitchen, for the supply and organization of which I was responsible. Then I got involved in this business, accumulated acquaintances - as always, this happens to everyone who is constantly doing something.

— You say you never studied restaurateurs? - Strictly speaking, no. I reached everything empirically. I don't like studying too much because I'm lazy and not very diligent. I'm more interested in acting.

- And yet, how does a Moscow boy from an artistic environment know, for example, that tuna has the most delicious thing - the middle belly? And that it is almost impossible to taste it fresh, because when transported refrigerated it loses its taste? — Again, probably genetics. I can’t say that I learned this somewhere or that anyone taught me. I am the fruit of collective creativity. Some relatives, nannies, grandmothers, aunts from Saratov were preparing something. I liked it, I memorized it, then tried to reproduce it. Asked questions, received answers. I watched the process. I'm generally very observant.

At a more conscious age, my life crossed paths with a wonderful woman - Liliya Moiseevna Mitta (wife of director Alexander Mitta). We were friends with her son, and I visited their hospitable home quite often. Any feast here was organized within 40 minutes without fuss or rush. At least that's what it seemed like. She was never frightened by the sudden arrival of guests or the lack of food in the refrigerator. Something always suddenly appeared out of nothing. But upon careful examination, each such “mess from an axe” had constituent elements that she had first carefully and skillfully set aside “in case,” selected, then brought to light, combined with something and got the result.

She was an artist by training, and, in addition to wonderful taste, her culinary creations were always incredibly beautifully presented. She taught me to slow down and understand that you can always create something from any product. And the subtleties of the culinary profession came to me by themselves. I've been doing this closely for the last fifteen years. I travel around the world a lot. Abroad, I visit on average two restaurants a day. I try, if something interests me, I remember it, I record it.

—Have you ever considered how many people are under your command? — A lot, about 700. But, unfortunately, this in no way characterizes me as a leader. I am firmly convinced that no one can do it better than I can do it myself. Therefore, I am forced to take part in all work situations - routine and emergency.

— Are there a lot of problems in the restaurant business? - A lot of. Where there is a human factor, there are always problems. Because talented and gifted people are very unstable. They need to be courted, cherished, cherished so that they come to you. And sometimes there is no such opportunity, sometimes there is no desire. In general, everything related to the staff is a quiet horror.

— What is a working day like for businessman Anton Tabakov? - Bustle. I wake up quite early, play with my daughter (my daughter Anya is 3 years old), and do sports. I set out on business after twelve, when the main traffic on the roads has subsided. And then I talk from morning to evening. Sometimes I eat. I wrote a book.
